Pre-infusion In Espresso
Most people assume expensive espresso machines simply produce “better coffee.”
But one of the biggest differences between entry-level and premium machines is often how the extraction begins.
This is where pre-infusion enters the conversation.
What is pre-infusion?
Pre-infusion is the process of introducing water to the coffee puck gently at low pressure before full extraction pressure is applied.
Instead of immediately forcing water through the puck at around 9 bars of pressure, the coffee is first allowed to saturate evenly.
Think of it like wetting soil gently before heavy rain.
The goal is simple:
improve puck saturation
reduce channeling
create a more even extraction
Why does it matter?
Espresso extraction is extremely sensitive.
If water finds weak spots in the puck too quickly, it can create channels — small paths where water rushes through unevenly. This often leads to:
bitterness
harshness
sourness
inconsistent flavour
A gentler pre-infusion stage helps the puck settle before full pressure arrives.
This does not magically remove bitterness.
But it can help create a sweeter, smoother and more balanced cup by improving extraction consistency.
The science behind it
Espresso extraction happens in stages.
As water passes through the coffee puck, different flavours are extracted at different times. Earlier in the shot, the coffee tends to release brighter acids, sweetness and aromatics. Later in the extraction, heavier and more bitter compounds begin to appear.
If water moves through the puck unevenly or too aggressively, some parts of the coffee can become over-extracted while others remain under-extracted. This often creates harsh, unbalanced espresso.
Pre-infusion helps by gently saturating the puck before full pressure is applied. The aim is to create a more even extraction, which can produce a smoother, sweeter and more balanced cup.
Which machines use pre-infusion well?
Different machines approach pre-infusion differently.
Some machines offer simple low-pressure saturation.
Others allow complete flow and pressure profiling.

This is where espresso starts becoming less about simple brewing…
