Pre-infusion To Intelligent Extraction: Where Espresso Machines May Be Heading
Pre-infusion already changed the way many high-end espresso machines approach extraction.
Instead of immediately forcing water through the coffee puck at full pressure, the machine first allows the puck to saturate gently and evenly. The aim is to reduce channeling, improve balance and create a smoother extraction.
But what happens when machines begin adjusting extraction dynamically in real time?
From programmed extraction to responsive extraction
Most espresso machines today still follow fixed instructions.
The machine applies:

a chosen temperature
a chosen flow rate
But coffee is not fixed.
Different coffees behave differently:

Extraction would no longer be static.
It would become responsive.
The intelligent portafilter
One possible future could involve highly sensitive portafilters capable of gathering extraction data directly from the puck itself.
Instead of simply holding coffee, the portafilter could become a sensory device:
detecting uneven saturation
identifying channeling before it fully develops
monitoring temperature behaviour
communicating with the machine continuously during extraction
The machine would not simply “follow a recipe.”
It would react to the coffee itself.
Are we already moving in this direction?

record and playback functions
extraction memory
advanced sensors
